"Napa Rose gets top marks for food and wine at Disney's Grand Hotel"

The California Grand, the first luxury resort built inside a Disney theme Park, offers a complete range of fine dining experiences from the formal to the casual. But the Grand’s signature dining room is the Napa Rose, a place to remember.

In a class of its own for an elegantly decorated establishment, the Napa Rose is one of the most beautiful dining rooms found anywhere in California. This is the Grand’s centerpiece for exceptional cuisine. The Napa Rose epitomizes California “style,” where sophistication and charm are happily married for a totally unique and elegant fine dining experience.

Inviting and spacious, the Napa Rose’s airy dining room is impressive, yet comfortable with 20 foot high vaulted ceilings highlighting the use of light-colored woods and dramatic 20 foot tall windows overlooking Disney’s California Adventure, bring the outdoors inside while a romantic fire pit, a large, state-of-the-art exhibition kitchen and the dramatic and warmly comfortable bar, add eye-catching focal points.

Napa Rose General Manager is Michael A. Jordan, a veteran of the restaurant industry and a man of many talents. Jordan is responsible for managing and supervising all of the fine dining venue’s staff and operations.

Prior to joining Disney, Jordan served two years as the general manager of the award-winning Pinot Provence in Costa Mesa. He was chef and owner of Bella Teresa Restaurant in Corona del Mar, general manager of the Five Diamond award-winning The Pavilion Restaurant at The Four Seasons Hotel in Newport Beach and chef and general manager of his family’s Italian restaurant Matteo’s in California and Hawaii.

In all, he has more than 33 years of experience in the restaurant industry and understands the skill and team work necessary to run and maintain a successful dining establishment. “I like to think that Napa Rose is made up of varying qualities that ultimately may be viewed as a work of art”, said Jordan.

Far from ordinary and one of the finest in the country the Napa Rose offers a regularly updated list 300 wines on any given day, many of which are rare vintages and “hidden treasures” an in-house stock of 900 different wines and 16,000 bottles rest in the cellar. “I change the menu several times a week and reprint the list two or three times a week,” explains Jordan. “We have many rare ‘cult’ wines and a few 100 point first-growth Bordeaux from the finest vintages in this century, mixed in with a vast selection of California wines and some French Champagne.” Reading the list may be compared to discovering the “who’s who” of California’s diverse vineyards.

The selection assembled by Jordan represent as many of the recognized growing areas of California as possible and features many varietals such as Rhone and Italian varietals grown in California. According to Jordan, “We specialize in the pairing of food and wine, and offer 40 to 50 wines by the glass. We always offer several premium high-end wines by the glass such as Caymus Cabernet and Long Vineyards Chardonnay.

“Impeccable service standards and culinary, expertise set our standards for excellence at the Napa Rose,” says Jordan who added “I love what I do.”

Napa Rose, specializing in California wine country cuisine, is under the direction of one of the California’s most talented young chefs, Andrew Sutton. Executive Chef Andrew Sutton comes to the Napa Rose from the renowned Auberge du Soleil in Napa Valley. A graduate of the Culinary Institute of America with 20 years’ experience in classic French kitchens and award winning restaurants, his culinary talents have been recognized nationally and elevated the regional cuisine of Napa Rose to the forefront of contemporary dining.

The menu features the delicious creativity of Chef Sutton’s inspired California wine country cuisine. Recipes feature only the freshest local produce, from farms, ranches and artisans with quality beautifully prepared. “At the Napa Rose, we celebrate California’s food and wine,” said Chef Sutton. “The food we serve is created to go with California wines and those from the Napa Valley in particular.”

Careful attention is paid to creating dishes that are not only visually stunning but appetizing as well, ranging from grilled goat cheese-stuffed grape leaves with whole roast garlic on roasted pepper and cracked olive vinaigrette, to chervil-crushed petrale sole with lobster potato salad and toasted lemon-caper essence. To add flavor, Napa Rose grows a variety of herbs within it its own nearby garden.

The Napa Rose also features four-course, prix-fixe Vintner’s Table selections that are paired with a hand-selected wine, and new dishes are created each week by the chef and his culinary staff.
